Regarding the transmission performance: The standard specify that the lowest component category in a link determines the class of the entire link, so when our cat.6A plug is used with cat.7 cable, the link will meet class EA.
The category of the cable is not relevant, but the dimension of the wire, the dimension of the conductor, type of conductor (solid, stranded consisting of 7 wires), the outer diameter of the cable which is specified in the data sheet.
